Vegan Pecan Pie Stuffed French Toast

Pecan Pie Filling Instructions:

1. Add all of the filling ingredients except the pecans to a pot and stir together.
2. Bring to a low boil for 3 minutes, then reduce to simmer for 5 minutes.
3. Then add the pecans in and stir.

French Toast Instructions:

1. First, make a flax egg (if not vegan, use a regular egg and skip this step). Take 1 tbsp flaxseed meal + 2.5 tbsp water and whisk it together in a small bowl. Set aside for 5 minutes to let it thicken and get an egg-like texture.
2. Take a loaf of bread and slice it into 4 thick slices.
3. Add the pecan filling on one side of each bread slice and fold in half.
4. In a shallow bowl big enough for your bread to fit, combine 3/4 cup unsweetened almond milk, 1 tsp cinnamon, 1/2 tsp vanilla, and 2-3 tsp maple syrup (depending on desired sweetness).
5. Mix in the flaxseed egg (or regular egg if not vegan) and mix all the ingredients together well.
6. Soak each piece of the folded bread on both sides in the mixture.
7. Add the soaked bread to a pan with coconut oil and cook over medium heat for 3-4 minutes on each side. Enjoy!
