This is the perfect meal for anyone tired of being in their kitchen this summer. These crockpot chicken fajitas are so easy to make, and were a hit with the whole family. Plus, they require minimal effort for the cook! This is the perfect busy summer day meal!

Instructions

1. Add the chicken breasts to the crockpot & sprinkle the seasoning mixture on both sides, making sure to coat each chicken breast well.
2. Add the peppers and onions into the crockpot.
3. Add the lime juice, broth, & green chilies. Stir everything together and cook on high for 2.5-3 hours or on low for 4-5 hours.
4. Remove the chicken and shred it into large pieces. Place the chicken back into the slow cooker and toss. Let it rest for about 15 minutes so that it reabsorbs the juices.
5. Optional: add the shredded chicken to the baking sheet with the peppers and onions and broil for about 5-6 minutes until it gets a little char on the edges.
6. Serve the fajitas with warm tortillas, guacamole, salsa queso, cheddar cheese, lime wedges, etc!
