Vegan PB Ice Cream Cookie Sandwiches

1. **Prepare Vegan PB Cookies:** In a bowl, mix together 1/2 cup peanut butter, 1/4 cup coconut sugar, 1/2 cup oat flour, 1 1/2 tbsp applesauce, 1 tsp vanilla, and 1 tsp baking powder until well combined.
2. Use a cookie scoop to portion the dough onto a greased cookie sheet. Flatten each cookie with a fork.
3. Bake the cookies in a preheated oven at 350°F (175°C) for 10 minutes.
4. Once baked, remove from oven and place the cookies in the freezer for 1 hour to cool and firm up.
5. **Prepare Banana Nice Cream:** While the cookies are chilling, add the 2 chopped frozen bananas and 2 tbsp peanut butter to a food processor or blender. Blend until smooth and creamy.
6. Transfer the nice cream mixture to a bowl and gently mix in the 2 tbsp chocolate chips.
7. **Assemble Sandwiches:** Take the chilled cookies from the freezer. Scoop a generous amount of banana nice cream between two cookies to form a sandwich.
8. Place the assembled sandwiches back in the freezer for at least 30 minutes to set completely.
9. Store the finished sandwiches in the freezer until you're ready to eat.
