Vegan & GF Cinnamon Rolls

For the cinnamon rolls dough: Mix 1 1/4 cup oat flour, 1 cup vanilla Greek yogurt, 2 tbsp maple syrup, 1 tsp baking powder, and 1 tsp apple cider vinegar together. Let the dough chill for 30 minutes. 

Prepare a flat surface with parchment paper and add extra oat flour to prevent sticking. Roll out the dough to about 1/4 inch thick, trying to form a rectangle. Grease your rolling pin with non-stick spray if needed to prevent sticking. 

For the cinnamon sugar mixture: In a small bowl, mix 1/4 cup coconut sugar and 1 tsp cinnamon. Sprinkle this mixture evenly over the rolled-out dough, leaving a little room on the edges. 

Slice the dough longways into about 5 slices, then roll each slice into a cinnamon roll shape. Add them to a small greased baking dish. Bake at 350F for 20 minutes. 

Once baked, top with melted coconut butter and sprinkle a little extra cinnamon.
