Tofu & Veggie Stir Fry Lunch Bowl

In a pan, sauté the chopped peppers, onions, mushrooms, tomatoes, and carrots in coconut oil over medium heat. Once the vegetables are slightly softened, add the tofu and liquid aminos, continuing to sauté until the tofu is heated through and the vegetables are tender-crisp. In a separate pan, fry one egg in ghee until desired doneness, then sprinkle with red pepper flakes. Prepare your cauliflower rice according to package directions. Serve the tofu and vegetable stir fry over the cauliflower rice, topped with the fried egg.
