Taco Salad Meal Prep with Zesty Lime Cilantro Dressing

1. Heat a pan over medium heat. Add the ground beef and taco seasoning. Sauté until the meat is browned, about 5-7 minutes. Drain any grease.
2. While the meat cooks, combine all of the dressing ingredients (cilantro, plain Greek yogurt, juice of 2 limes, honey, kosher salt, garlic powder, extra-virgin olive oil) in a food processor and blend until smooth.
3. To speed things along, chop your salad veggies (romaine lettuce, tomatoes, red onion, lime, corn) in a food processor.
4. Assemble the salads in 4 containers. Store the cooked ground beef and the dressing separately from the salad mix so you can heat the meat and add the dressing just before serving.
