Sweet & Savory Paleo Waffles

1. Prepare Waffle Batter: In a bowl, combine 1 cup Birch Benders paleo mix, 1 cup unsweetened almond milk, 1 tablespoon vanilla collagen, and a pinch of cinnamon. Mix until well combined.
2. Cook Waffles: Spray your waffle maker with non-stick spray. Cook the waffle batter in batches until golden brown and cooked through. (The recipe yields 6 mini waffles, cook 3 right away for a serving).
3. Make Caramelized Banana: Add about 0.5 tablespoon of coconut oil to a skillet. Slice 0.5 banana and sprinkle with a pinch of cinnamon. Cook the banana slices in the skillet for 30 seconds on each side until caramelized.
4. Prepare Other Toppings: Fry 1 egg in about 0.5 tablespoon of ghee. Mash 0.5 avocado and season with 1 teaspoon of Trader Joe's Everything But The Bagel Seasoning.
5. Assemble: Top a cooked waffle (or waffles, if desired) with the caramelized banana, a drizzle of peanut butter, the fried egg, and the mashed avocado.
