1. Prep Sweet Potato Toast (can be done days ahead): Slice 1 sweet potato into about 6 small slices. Bake at 400°F (200°C) for 40 minutes until tender. Reheat in a toaster when ready to serve.
2. Prepare Melted Peanut Butter: Put a spoonful (about 1 tablespoon) of peanut butter in a small bowl and microwave for 30 seconds until runny.
3. Sauté Cinnamon Apples: Heat a pan over low-medium heat and add about 1 tablespoon of coconut oil. Add sliced apple (about 1 medium apple), sprinkled with half of the cinnamon (0.5 teaspoon). Cook for about 5-7 minutes until softened.
4. Sauté Cinnamon Bananas: Add sliced banana (about 1 medium banana), sprinkled with the remaining cinnamon (0.5 teaspoon) to the same pan. Cook for about 30 seconds on each side.
5. Assemble: Top the reheated sweet potato toasts with plain kefir, the melted peanut butter, sautéed cinnamon apples, and sautéed cinnamon bananas. Serve immediately.
