Sweet Potato Nuggets 🍠🙌🏻 A new recipe to add into our #meatlessmonday rotation 🎉 Was so happy with how these turned out and I’m ready to remake them with a buffalo coating or barbecue 😍 I kept the flavor relatively simple to be more like a traditional nugget so you definitely need your favorite dipping sauce or feel free to spice it up 🔥

Instructions

In a food processor, combine the chickpeas (rinsed and patted dry) and the mashed cooked sweet potato. Blend together. Add the mixture to a bowl with the flax seed meal, almond flour, coconut flour, salt, paprika, pepper, and garlic powder. Mix everything together well, then use your hands to make it into a dough by pressing it together.

Preheat oven to 375F. Line a pan with parchment paper. Form nugget shapes with the dough mixture and place on the prepared pan. Bake for 20-22 minutes, flipping halfway through. Served here with @primalkitchenfoods bbq sauce.
