Sweet Potato Casserole

1. Heat a medium pot of boiling water.
2. Peel and cube the sweet potatoes.
3. Boil for about 15 minutes, until they’re totally soft.
4. In a bowl, mash the sweet potatoes.
5. Add in the rest of the casserole ingredients (coconut sugar, melted coconut oil, almond milk, cinnamon, vanilla, salt).
6. Mix together well.
7. Grease a small casserole dish and add the sweet potato mixture in.
8. In a food processor, add the pecan topping ingredients (pecans, almond flour, coconut sugar, cinnamon) and pulse together.
9. Add the topping on top of the sweet potato mixture. You can add a handful of whole pecans if you want them for texture!
10. Bake at 400F for 20 minutes.
11. If you add marshmallows, add them right at the end and broil until golden.
