Microwave the sweet potato for 1-2 minutes to make it soft enough to slice. Cut the softened sweet potato into slices. Broil the sweet potato slices for 10 minutes on the bottom shelf in the oven. While the sweet potato is broiling, fry an egg in pink Himalayan salt ghee and sauté some spinach. Once the sweet potato slices are broiled, top one slice with the fried egg and sautéed spinach. Top the other sweet potato slice with 1/2 avocado and African smoke seasoning.
