We all love peanut butter cups so these peanut butter chocolate muffins are a no brainer. I added some chocolate frosting on some but left it off others so you could see the peanut butter filling.
For the muffins: In a mixing bowl, whisk the eggs. Then add in everything for the muffins besides the chocolate chips. Mix together well. Fold in the chocolate chips. Add batter to muffin tins, filling about 3/4 of the way and bake at 350F for 20 minutes. Let cool for about 10 minutes. For the peanut butter filling: Combine 1/4 cup peanut butter, 1/4 cup honey, and 2 tbsp arrowroot flour. To stuff the muffins: Take a knife and cut the center of the cooled muffins out, only cutting about 3/4 of the way down. Set the middle part aside. Add the peanut butter filling to the hollowed-out muffins. Top with chocolate frosting.
