Peanut Butter Stuffed Chocolate Cookies

In a large mixing bowl, whisk the egg. Then add in the rest of the chocolate cookie ingredients. In a small bowl, mix together the peanut butter filling. Preheat oven to 350F. Line a pan with parchment paper. Take a cookie scoop and scoop out rolls of the chocolate dough. Lay them on the sheet and flatten them. On half of them, add a spoonful of the peanut butter layer. Flatten, add a chocolate cookie on top and press down a little. Bake for 18 minutes and let cool completely before removing! They need a little time to firm up!
