The coziest drink ever for a Friday evening or a snow day. This rich and comforting hot chocolate combines unsweetened almond milk, cocoa, peanut butter, cinnamon, and vanilla, sweetened with honey or maple syrup.
In a small pot, combine 2 cups unsweetened almond milk, 3 tbsp unsweetened cocoa powder, 2 tbsp runny peanut butter, 1 tsp cinnamon, 1 tsp vanilla, and 2 1/2-3 tbsp honey or maple syrup. Whisk everything together and bring to a simmer. Reduce heat to low-medium and let it cook for 8-10 minutes, whisking every 2 minutes to ensure the peanut butter melts and mixes in completely. After the time is up, add another 1/2 cup unsweetened almond milk to thin it out a little bit and whisk again. Serve topped with toasted marshmallows (made in the skillet), chocolate chips, and a tiny bit of peanut butter drizzled on top.
