Going to use this bunny muffin mold as many times as I can before Easter 😂 This recipe is from a few years ago but I make them every year for Easter! They’re easy and I add a 3 ingredient greek yogurt icing on top! I added chopped nuts on top but you can add them into the batter too, raisins are also good!

What you need

honey

1 tbsp honey

plain greek yogurt

1 cup plain greek yogurt

baking soda

½ tsp baking soda

ground ginger

¼ tsp ground ginger

coconut oil

2 tbsp coconut oil

cinnamon

salt

almond flour

1 cup almond flour

egg

liquid honey

2 tbsp liquid honey

Instructions

In a bowl, mix together the almond flour, eggs, shredded carrots, melted coconut oil, honey, cinnamon, baking soda, ginger, and a sprinkle of salt. Mix or blend until well combined. Spray your muffin pan and fill with the batter. Bake at 350°F for 20 minutes. For the topping, mix 1 cup of plain Greek yogurt with 1 tablespoon of honey and 1/2 teaspoon of cinnamon.
