Mini Peanut Butter Cookie Sandwich Bites

In a mixing bowl, add the egg and whisk. Then add in the rest of the cookie ingredients (1 cup PB, 1/2 cup coconut sugar, 1 tsp cinnamon, 1 tsp baking powder) and mix well. Grease a cookie sheet. Roll the dough into mini balls and place on the sheet, then flatten down a bit. Repeat this process to make 20 mini cookies. Bake at 350F for 12-14 minutes. Let cool completely. In a small bowl, make the peanut butter filling by mixing together 1/2 cup PB, 2 tbsp coconut flour, and 1 tbsp maple syrup or honey. Add the filling to one of the flat sides of a cooled cookie. Place another cookie on top to form a sandwich. Repeat for 10 cookie sandwiches. Store on the counter for 3 days or in the fridge for 4-5 days.
