Mexican Inspired Breakfast Bowl

1. Prepare Guacamole: Mash 3 avocados. Chop onion, cilantro, and tomato. Combine mashed avocado with chopped onion, cilantro, tomato, garlic, onion powder, and a few squeezes of lime.
2. Prepare Sweet Potato: If using a frozen sweet potato, microwave it to thaw. For enhanced taste, broil it in the oven for a few minutes. Mash half of the sweet potato.
3. Cook Egg and Spinach: Fry 1 egg in ghee to your desired doneness. Separately, sauté spinach with red pepper flakes until wilted.
4. Assemble Bowl: Combine the fried egg, prepared guacamole, sautéed spinach, fresh tomatoes, mashed sweet potato, and chunky salsa in a bowl. Serve immediately.
