Maple Pumpkin Bourbon Smash Cocktail

In a small pot, combine the coconut sugar/brown sugar, maple syrup, water, pumpkin purée, and pumpkin pie spice to make the maple pumpkin syrup. Mix and let simmer for about 5 minutes, stirring occasionally. Remove from heat and strain in a fine mesh strainer if you want to make sure the pumpkin texture is gone. Then let cool. In a cocktail shaker, combine ice, 3 tablespoons of the prepared maple pumpkin syrup, and 2 ounces of bourbon. Shake well. Pour into a glass and add club soda/tonic water/sparkling water to taste for some bubbles. Enjoy!
