Make One + Freeze One Postpartum Meal Prep! Also perfect to save for back to school time. Also just a great easy dinner option!
This is for 1 pan, I doubled this recipe to make one & freeze one. Instructions below for both baking now and freezing!
in a large bowl, add the shredded chicken, taco seasoning, black beans, and green chilies.
Stir together
assemble your enchiladas.
add chicken mixture to a tortilla and then sprinkle with cheese on top
Roll the tortilla and place seam side down in a greased 9 x 13 pan (either a baking dish or one that you’ll be using to freeze)
Repeat for all 8 tortillas
IF MAKING RIGHT AWAY: Add the enchilada sauce & sprinkle with remaining cheese. Bake at 400F for 18-20 minutes. Remove and enjoy!
IF FREEZING: don’t add the enchilada sauce, just add the remaining cheese. You can freeze the enchilada sauce separately or just leave in your pantry until you’re ready to make the enchiladas.
To bake from frozen: Pour enchilada sauce (if it was frozen, thaw the sauce overnight) over frozen enchiladas and bake from frozen at 350°F for about 1 hour, covered in foil. Remove foil and bake for 30 minutes, or until warm throughout and the cheese is melted.
