Lentil Tacos with Fajita Veggies

1. Cook 1 cup of lentils in 3-4 cups of water according to package instructions (takes about 20-25 minutes).
2. While the lentils are almost done, sauté 1/2 a diced onion in 1 tablespoon of olive oil for 5 minutes.
3. Add 1 cup of the cooked lentils to the sautéed onion.
4. Stir in 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp Chipotle powder, 1 tsp chili powder, and 1/2 tsp sea salt.
5. Add 1/2 cup water and 1/2 cup salsa to the lentil mixture.
6. Mash about 1/2 of the lentils directly in the pan. Let it simmer for a few minutes until all of the water is absorbed.
7. For the fajita veggies: Cut up 2 bell peppers, 1/2 zucchini, and 1/2 cup mushrooms.
8. Toss the cut vegetables with 1 tablespoon of olive oil and 1 tablespoon of Mexican fiesta seasoning.
9. Bake the veggies at 425F for 20 minutes. Start baking the veggies when you start cooking the lentils.
10. Serve the lentil filling and fajita veggies in tortillas, paired with additional salsa and guacamole.
