Remade this easy muffin recipe from last summer! Just adding to my lemon baked goods obsession haha. These are so light and fluffy! The texture is 💯 and the flavor is even better! You can use lemon extract or zest. I used lemon extract in the original recipe but this morning I used lemon zest. Both are great!

Preheat oven to 350F. In a bowl, whisk 2 eggs. Then add in 1/2 cup almond flour, 2 tbsp coconut flour, 1/2 tsp baking powder, 1/4 cup maple syrup, 1 1/2 tsp lemon extract (or 3 tsp lemon zest), and 1 tbsp softened ghee. Mix all ingredients together thoroughly. Then add in 1/4 cup blueberries and mix in with a spatula. Line a muffin tin with baking cups. Bake for 20 minutes.
