Ingredients: 4 piece zucchini; Olive oil; 1 lb ground chicken (or turkey); 1 cup marinara sauce; 1 tsp Italian seasoning; 1 tsp garlic powder; 0.25 tsp salt; 0.5 cup cheese of choice (feta, Parmesan, and mozzarella all tasted great!)

Italian Stuffed Zucchini Boats 🍅 We made these last night and they were so tasty and simple! Not many ingredients and they don’t take long either 👌🏼 Tried 3 different cheeses and I think Parmesan was the best! But you can’t go wrong with any really. Eli carved out the zucchini boats and did a fantastic job so this meal definitely needed to be in the IG feed 😉

Cut the zucchinis in half then scoop out the middle. Set aside in a bowl to use later. Place on a greased baking sheet. Bake for 15 mins at 425F 

While the zucchini cooks, make the chicken 

Heat a skillet over medium heat, add a little olive oil, add the chicken, salt, Italian seasoning, and garlic. Break it up into small pieces and let cook until it’s browned. 7-8 minutes. Then add in 1 cup marinara sauce and let it simmer until the zucchini are done.

Then remove the zucchini from the oven and add the chicken marinara to them. Sprinkle cheese on top. Bake 6-7 more minutes then broil for 2 at the end to get them crispy. Enjoy!
