Hot Chocolate Cookies with a twist

In a small bowl, separate the egg yolk and egg white. (Optional: scramble the egg white with some salt & pepper for a snack while cookies bake). Then add the egg yolk to a mixing bowl and whisk. Add in all ingredients except the chocolate chips and marshmallows, and mix well. Then add in your chocolate chips & marshmallows and mix them in. Line a pan with parchment paper and form 3 cookies. Bake at 350F for 12 minutes. Let cool on the baking sheet for 5 minutes before removing. Enjoy!
