15 mins prepServes 1
A satisfying meal prep bowl featuring a hard-boiled egg, roasted sweet potato, flavorful roasted chickpeas seasoned with paprika and garlic, roasted cauliflower, sautéed mushrooms, and fresh tomatoes. A great option for a healthy lunch.
1. Bring water to a boil, then carefully add 1 egg and boil for 7 minutes. Immediately transfer the cooked egg to an ice bath to stop the cooking process and cool.
2. Preheat your oven to 450F (232C). In a bowl, toss chickpeas with plenty of paprika, garlic, and pink Himalayan salt until well coated. Spread them on a baking sheet and roast for 15 minutes.
3. Preheat your oven to 400F (200C). Roast cauliflower for 45 minutes until tender and slightly caramelized.
4. Roast sweet potato at 400F (200C) for 40 minutes, or until soft and slightly browned.
5. Sauté mushrooms in a pan until they are tender and have released their liquid.
6. Assemble your bowl by combining the hard-boiled egg (peeled and halved/sliced), roasted sweet potato, roasted chickpeas, roasted cauliflower, sautéed mushrooms, and fresh tomatoes. Serve with hummus on the side for dipping, if desired.
