Halloween Cinnamon Rolls

1. Mix all of the cinnamon roll dough ingredients together in a bowl.
2. If the dough feels super sticky, add an additional 1/4 cup oat flour.
3. Let the dough chill for 30 minutes.
4. While the dough chills, prepare the cinnamon sugar mixture: in a small bowl, mix 1/4 cup coconut sugar and 1 tsp cinnamon.
5. Place parchment paper on a flat surface and add extra oat flour to prevent the dough from sticking.
6. Roll out the dough to about 1/4 inch thick, trying to form a rectangle. (Grease your rolling pin with non-stick spray if needed).
7. Sprinkle the cinnamon sugar mixture evenly over the dough, leaving a little room on the edges.
8. Slice the dough longways into about 5 equal strips.
9. Roll each strip into a cinnamon roll shape.
10. Add the rolls to a small greased baking dish.
11. Bake at 350F for 20 minutes.
12. Once baked, add melted coconut butter on top and decorate with small candy eyes if you're feeling festive.
