Easy Vegan Roasted Veggie Pasta Salad 🥗

Preheat oven to 400F

Dice the veggies & pat the chickpeas dry.

Add to a baking sheet that’s either oiled or lined with parchment paper so they don’t stick

Drizzle with a little olive oil & sprinkle with salt & pepper

Bake for 25 minutes

Remove & let cool completely- it helps to remove them from the hot pan

Cook pasta according to package instructions

Drain & rinse under cold water to cool the pasta

In a small bowl, combine all the dressing ingredients.

When the pasta & veggies are cool, add to a large bowl

Drizzle dressing on top

Add vegan Parmesan cheese

Toss to combine, serve, & enjoy!
