Easy Skillet Chicken paired with roasted veggies 😍 Kept the spices simple but it wasn’t lacking in flavor 😎 Haven’t made any of these goodies in forever so it was a nice switch up from salmon and sweet potatoes which feels like it’s been my go to dinner recently 😂 - - I definitely get into food ruts but simply changing your protein source or your seasoning can totally change a meal 💯 It’s important to eat a variety of meats + veggies to make sure you’re getting a variety of nutrients... although if I could just eat sweet potatoes and avocados forever I wouldn’t be upset about it 😂 Anyone else?! 💁🏼♀️ This chicken was so simple to make- I made it in my cast iron and it took about 5 minutes to heat up the skillet and then 12-14 minutes to cook the chicken. Compared to baking it in the oven for 35 minutes, I’ll take this method 💯 I always use a meat thermometer to check the internal temps of meat because I’m paranoid about undercooking 😅 You can get them at most stores for a reasonable price and peace of mind haha 👌🏻 Have a great night friends 💕 - - #recipe details 👉🏻 For the chicken: heat a skillet over medium heat. Sprinkle 2 chicken breasts with garlic, pink Himalayan salt, and pepper. After about 5 mins, add some olive oil to the skillet and add the chicken. Cook for 6-7 minutes, flip and then cook for 6-7 more minutes. I let it cool off in the pan for a few mins before serving. For the veggies: Colorful potatoes coated in 1 tbsp olive oil, pepper, and pink Himalayan salt and the carrots in the same. Bake both at 450F, potatoes for 35 mins and carrots for 40 minutes. #paleo #foodies #foodlover
