Easy One-Pan Shrimp and Asparagus Salad
10 mins prepServes 2
An easy under 20-minute one-pan dinner featuring roasted shrimp and asparagus, served as a refreshing salad with avocado, tomatoes, feta, onion, and lemon slices. Perfect for a quick summer meal.
Preheat your oven to 400°F (200°C). Wash and cut the ends off the asparagus. Place the asparagus in a Ziploc freezer bag. Add 1/2 tablespoon of olive oil, along with unmeasured amounts of cumin, basil, garlic powder, paprika, and pepper. Shake to coat. Line a baking pan with foil or oil it. Spread the asparagus on the pan and put it in the oven for about 5 minutes.
While the asparagus is cooking, put the washed shrimp in the same Ziploc bag as the asparagus and add the same spices. Once the asparagus has cooked for 5 minutes, add the seasoned shrimp to the pan with the asparagus. Let it all cook for 6 more minutes.
Once cooked, transfer the shrimp and asparagus to your salad bowl. Add avocado, tomatoes, feta, onion, and lemon slices to complete your salad. The lemon adds a great flavor!
