Homemade gluten-free pizza that's better than store-bought. The crust is made from sweet potato, oat flour, and coconut flour. Toppings suggested are marinara sauce, pepperoni, mozzarella, basil, hot honey, and red pepper flakes.
1. In a bowl, whisk the egg.
2. For the sweet potato, I baked it at 425F for 50 minutes the night before. Or you can microwave it if you’re in a time crunch.
3. Add in the sweet potato and all of the other ingredients. Mix together well.
4. Press into a dough in the bowl.
5. Preheat the oven to 400F.
6. Makes 2 mini pizzas or 1 regular pizza.
7. Line a pizza pan or a regular pan with parchment paper.
8. Place the dough on the pan and flatten out to about 1/2 inch thick. It doesn’t have to be perfect!
9. Bake at 400F for 30 mins
10. Remove, flip, bake 10 more minutes.
11. Remove and add toppings.
12. Bake 5-10 more minutes.
13. Remove, let cool, slice, and enjoy!
