Easy Fall Maple Pumpkin Bourbon Cocktail

Maple Pumpkin Syrup:

1. In a small pot, combine the coconut sugar/brown sugar, maple syrup, water, pumpkin purée, and pumpkin pie spice.
2. Mix well and let the mixture simmer for about 5 minutes, stirring occasionally.
3. Remove from heat. If you prefer a smoother texture without pumpkin pulp, strain the syrup through a fine mesh strainer.
4. Let the syrup cool completely before using.

Maple Pumpkin Bourbon Cocktail:

1. In a cocktail shaker, combine ice, 3 tablespoons of the cooled maple pumpkin syrup, and 2 ounces of bourbon.
2. Shake well until thoroughly chilled.
3. Pour the mixture into a glass.
4. Top with club soda, tonic water, or sparkling water to taste for some bubbles.
5. Enjoy!
