Easiest Creamy Vegan Tomato Soup 🍅 Paired with a grilled cheese that’s definitely not vegan but you can easily make one with vegan cheese + coconut oil! This is what I like to call my lazy tomato soup because it’s minimal ingredients + minimal effort! Pairs super well with a crispy grilled cheese 😉 Honestly what else do you eat tomato soup with?!

Instructions

Soak cashews in boiling water for 20 minutes or soak them overnight. Heat a pot over medium heat. Sautéed onion in olive oil for 5-7 minutes. Get out your blender. Add the cans of diced tomatoes, veggie broth, soaked cashews, garlic powder, sautéed onion, sprinkle of salt, pepper. Blend everything together. Heat the pan or pot over medium heat, add the blended ingredients in. Heat until warm. Add in 1/2 cup coconut cream and stir. Enjoy!
