Crispy Salmon and Roasted Veggie Bowl
10 mins prepServes 1
A quick and easy dinner featuring crispy salmon, roasted brussels sprouts, avocado, sweet potato fries, and fresh tomatoes. Perfect for a balanced and flavorful meal, easily adapted for leftovers.
1. If using frozen sweet potato fries, preheat oven to 400°F (200°C) and bake for 20 minutes on each side until crispy. If using leftover fries, reheat them in the oven or air fryer until warm and crispy.
2. Preheat your broiler. Place frozen brussel sprouts on a baking sheet on the middle shelf. Broil until crispy, approximately 5-10 minutes, flipping once. Be careful not to burn them. Once crispy, sprinkle with Trader Joe's Chili Lime seasoning.
3. While vegetables are cooking, heat a skillet over medium-high heat with a splash of avocado oil until hot. Add the salmon fillet (whether fresh or leftover). Cook for 3 minutes on each side, seasoning with Primal Palate New Bae seasoning during cooking, until cooked through and crispy.
4. While salmon and vegetables are cooking, slice the avocado and sprinkle with red pepper flakes.
5. Assemble your bowl: Place the crispy salmon, roasted brussel sprouts, sweet potato fries, sliced avocado, and fresh tomatoes in a bowl. Serve immediately.
