Chocolate Covered Strawberry Brownie Bites

For the Brownie Bites: Mix the mashed ripe banana, nut butter, cocoa powder, and coconut sugar together in a bowl. Grease a mini cupcake tin and add the batter almost all the way up. Bake at 350F for 17 minutes. Let cool a little then remove.

For the Chocolate covered strawberries: Melt the vegan chocolate chips and coconut oil together by microwaving for 30 seconds, stirring, and repeating until melted. Cut the tops off the strawberries. Once the brownies are done and slightly cooled, place a strawberry on top of each brownie bite. Then drizzle the melted chocolate completely over the strawberry and the brownie, ensuring to cover the brownie so the strawberry sticks. Place in the freezer for 1 hour or until the chocolate has hardened. Store these in the freezer and pull out 5 minutes before eating.
