15 mins prepServes 2
This chickpea salad with a spicy almond butter dressing comes together in just 15 minutes. The dressing is so good, you might want to make a double batch for other meals like chicken and quinoa bowls.
For the Roasted Chickpeas: Drain the 15-ounce can of chickpeas and pat them dry. Add them to a bowl and top with 1 tbsp olive oil, 2 tsp coconut aminos (or soy sauce), 1/2 tsp garlic powder, 1/2 tsp ginger, and salt & pepper to taste. Coat the chickpeas thoroughly and roast at 400°F (200°C) for about 15 minutes.
For the Spicy Almond Butter Sauce: In a small bowl, whisk together 1/4 cup almond butter (or any nut butter), 1 tbsp apple cider vinegar, the juice of 1 squeezed lime, salt & pepper to taste, 1 tsp sriracha, 1 tbsp coconut aminos, 1/2 tsp ginger, and 1/2 tbsp water until smooth.
To assemble the salad: Combine the roasted chickpeas, spicy almond butter sauce, bell pepper, cabbage, avocado, and shredded carrots in a bowl.
