Chicken Bacon Ranch Skillet

Heat your pan over medium heat. Add the bacon & cook for about 6 minutes. While the bacon cooks, dice the onion & chicken. Remove the bacon & leave some of the bacon grease in the pan. Add the diced onion & sauté 1-2 minutes. Then add the chicken in. Add the ranch seasoning on top. Sauté for 6-7 minutes, until the chicken is cooked to 165F. While it cooks, thinly slice the Brussels sprouts (I use a food processor to do this!). Remove the onion & the chicken. Add the Brussels and cover with the lid. Cook for 6-7 minutes, until they are soft. Add a little water if needed to soften them. Then add back in the chicken, bacon, and add the spinach. Stir together for about 1 minute, add the ranch dressing, and it’s done! I paired mine with rice!
