A simple and tasty cauliflower crust pizza featuring a BBQ chicken side and a plant-based BBQ chickpea side with homemade cashew cheese sauce. Perfect for using leftover BBQ chicken or a satisfying date night dinner.
1. Preheat your oven and prepare the cauliflower crust according to package instructions. While the crust bakes, roast the chickpeas.
2. Rinse and dry 1 can of chickpeas. Coat them with 1/4 cup of BBQ sauce and roast for 15 minutes, ideally concurrently with the initial crust bake.
3. Bake the cauliflower crust for 20 minutes before adding any toppings.
4. After the initial crust bake, remove it from the oven. On one half of the pizza, spread a layer of BBQ sauce, then top with leftover BBQ chicken, onions, and shredded cheese.
5. On the other half, spread BBQ sauce, then top with spinach and the roasted BBQ chickpeas.
6. Return the pizza to the oven and bake for an additional 5 minutes.
7. Once baked, remove the pizza and drizzle the cashew cheese sauce over the chickpea side (do not add the cashew cheese sauce before baking). Serve immediately.
