Cast Iron Salmon & Roasted Veggie Plate
10 mins prepServes 1
A quick and healthy lunch plate featuring pan-seared salmon seasoned with 'New Bae', roasted Brussels sprouts, cooked zucchini, roasted potatoes, avocado, and fresh tomatoes. The salmon cooks in just 6 minutes.
1. Preheat oven to 400°F (200°C).
2. Place Brussels sprouts on a baking sheet and roast in the preheated oven for 35 minutes, until tender and lightly caramelized.
3. While Brussels sprouts are roasting, heat avocado oil in a cast iron skillet over medium-high heat.
4. Season the salmon piece generously with Primal Palate New Bae seasoning.
5. Cook the salmon in the hot cast iron skillet for 3 minutes on each side, for a total of 6 minutes, until cooked through to your desired doneness.
6. In a separate pan (or the same cast iron after removing salmon), cook sliced zucchini in a little avocado oil until tender-crisp.
7. Prepare half an avocado by seasoning it with Trader Joe’s Everything But The Bagel seasoning.
8. Assemble your plate with the cooked salmon, roasted Brussels sprouts, cooked zucchini, roasted potatoes, seasoned avocado, and fresh tomatoes.
