Cajun Chicken Sausage Pasta

Heat a large skillet over medium heat. Add olive oil and the chicken sausage (cut into about 1/2 inch pieces). Cook until the chicken sausage is a little browned on each side. This will vary based on the thickness of the chicken! Remove and set aside. In a pot, cook your pasta. Then in the same pan, add kale, tomatoes, chicken sausage, garlic, and Cajun seasoning. Stir everything together. Sauté it for 3-4 minutes. Then add in the coconut milk, nutritional yeast, and cooked pasta (rinsed and drained). Stir together and bring to a low boil then reduce to a simmer. Let it simmer 3-4 minutes, stirring well. Then remove from heat and enjoy!
