Burgers with Chipotle Sweet Potato Fries

1. **Chipotle Sweet Potato Fries:** Cut 2 large sweet potatoes into fries. Coat them with 1 tablespoon of olive oil, then sprinkle with chipotle powder and pink Himalayan salt. Bake the fries at 425F for 30 minutes, then continue baking for another 15 minutes.
2. **Prepare Burger Veggies:** While the fries are baking, dice 1/2 an onion and chop 1/2 cup of mushrooms and 1/2 cup of spinach. Sauté these vegetables in olive oil for 5 minutes.
3. **Form Burgers:** In a large bowl, combine 1 pound of ground beef with the sautéed vegetables, 1 teaspoon of garlic, 1/2 teaspoon of onion powder, 1 teaspoon of chili powder, and a sprinkle of salt. Mix well and form into 7 burger patties.
4. **Cook Burgers:** Cook the burger patties in olive oil over medium heat for 5 minutes on each side. After pan-frying, transfer the burgers to the oven (still at 425F) and bake for an additional 5 minutes. Always check the internal temperature to ensure they are fully cooked.
