Buffalo Jackfruit Sweet Potato Sliders

For the Sweet Potato Buns: Slice one large, round sweet potato into about 1/2 inch slices. You can microwave the sweet potato beforehand to make it easier to slice. Grease a baking pan and broil the sweet potato slices on the bottom shelf for 10-12 minutes.

For the Buffalo Jackfruit Filling: Heat a skillet over medium heat and add a little oil. Add the package of lightly seasoned jackfruit to the skillet and sauté for about 3-5 minutes, breaking it up into smaller pieces with a spatula. Then, add 1 teaspoon of garlic powder, 1 teaspoon of chili powder, 1/4 cup of organic hot sauce, and 1/2 cup of water. Let the mixture simmer for about 10 minutes.

Assemble the sliders by placing the buffalo jackfruit filling between two sweet potato slices. Serve immediately with fresh onions, avocado, and jalapeños.
