Our #meatlessmonday dinner from last night! We love these burgers, they take about 10 minutes to cook and about 5-10 minutes to get the ingredients together. Add all the toppings and you’re good to go👌🏻
For the Buffalo Chickpea Burgers:
1. Rinse, pat dry, and peel the skins off the chickpeas. To rub the skins off, place them between a cloth and run it back and forth; most will naturally come off. This step is not required to be perfect but helps with texture.
2. Add the peeled chickpeas to a food processor, pulse, then remove and add to a bowl.
3. Add oats to a food processor, pulse, then add to the same bowl.
4. Add the finely diced onion, finely grated and patted dry zucchini, nutritional yeast, garlic, salt, and hot sauce to the bowl with the chickpeas and oats.
5. Mix all ingredients together with a spatula. Then press into a dough and form 6 patties.
6. Heat a skillet over medium heat and add olive oil or avocado oil.
7. Cook the patties for 5 minutes, flip, and cook for 5 more minutes until both sides are crispy.
For the Sweet Potato Buns:
1. Slice an extra large sweet potato into rounds. You can microwave it for 2 minutes to soften it a bit before slicing.
2. Broil the sweet potato slices at 500F for 12 minutes on the bottom shelf.
