30 mins prepServes 6
My new favorite chicken burger recipe, though it also works with ground turkey! This complete meal includes Buffalo Chicken Burgers, Spicy Baked Corn, and a homemade Cashew Cheese Sauce as an alternative to ranch. Perfect for a balanced and flavorful dinner.
Buffalo Chicken Burgers:
1. Sauté the chopped onion and spinach for 3-4 minutes.
2. In a bowl, combine the sautéed onion and spinach with ground chicken, shredded carrot, feta, hot sauce, 1 tsp garlic powder, 1/2 tsp sea salt, and a sprinkle of black pepper.
3. Preheat oven to 400F (200C).
4. Line a pan with aluminum foil or grease it.
5. Form 6-7 burgers from the mixture and place them on the pan.
6. Bake for 20 minutes, flipping halfway through.
7. Broil at the end for 2-3 minutes to crisp.
Spicy Baked Corn:
1. Melt 2 tbsp ghee and mix in 1/2 tsp onion powder, 1/2 tsp garlic powder, a sprinkle of salt and pepper, and 1/4 tsp chipotle or chili powder (add more for extra spice).
2. Brush the 3 ears of corn with the spice mixture.
3. Wrap each ear of corn in foil.
4. Bake at 400F (200C) for 25-30 minutes.
Cashew Cheese Sauce:
1. Soak 1 cup of cashews for at least 4 hours, or preferably overnight.
2. Combine the soaked cashews with 1 cup water, 2 tbsp nutritional yeast, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp paprika, 1/2 tsp sea salt, and 1/2 tsp chipotle powder in a blender or food processor.
3. Purée until smooth and creamy.
