These brownie skewers are a simple and fun vegan option, perfect for celebrations like the 4th of July. The recipe focuses on easy steps, baking the brownies, letting them cool, and then layering them with fruit and vegan marshmallows on skewers.
In a bowl, mash the bananas. Then add the nut butter, almond flour, avocado, maple syrup, cocoa powder, vegan protein powder, and baking powder, and mix well. Line a brownie pan with parchment paper. Bake for 45-48 minutes at 350F. Once they’re done, let cool completely. If you want them less fudgy, stick them in the fridge for an hour to harden up. Cut the brownies into small squares.
Take about 10-12 skewers. Cut the tops off the strawberries. Assemble the skewers by alternating ingredients. A suggested order is strawberry, marshmallow, blueberries, brownie, and then repeat in the opposite order if desired.
