BBQ Shredded Jackfruit

1. Drain and rinse the can of jackfruit, then pat it dry.
2. Cut the jackfruit into small, approximately one-inch cubes.
3. In a bowl, coat the jackfruit cubes with 1 teaspoon of garlic, 1 teaspoon of chili powder, and 1/4 cup of BBQ sauce.
4. Heat a pan over low heat and add 1 teaspoon of olive oil.
5. Add the coated jackfruit to the pan, cover, and cook for 35 minutes at a simmer.
6. About halfway through the cooking time, add another 1/4 cup of BBQ sauce for more flavor.
7. Once cooked, transfer the jackfruit to a bowl.
8. Use two forks to shred the jackfruit until it resembles pulled meat.
9. Stir in a few more tablespoons of BBQ sauce after shredding.
10. Serve the shredded jackfruit paired with avocado, tomatoes, jalapeños, onions, and sautéed mushrooms to make a salad, or use in tacos.
