BBQ Baked Tofu with Sweet Potato and Avocado
60 mins prepServes 1
An easy, plant-based dinner featuring BBQ baked tofu, Japanese sweet potatoes, and avocado. Perfect for refueling after a run, this recipe highlights the importance of pressing tofu for better texture.
First, press your extra firm tofu to remove excess water. You can do this by wrapping it in a dish towel, placing it between two plates, and putting some heavy items on top for about 30 minutes. Once pressed, cut the tofu into cubes. Marinate the tofu cubes in 1/4 cup of BBQ sauce for 30 minutes (a brownie glass pan works well for this). Preheat your oven to 425°F (220°C). Add more BBQ sauce to coat the marinated tofu cubes. Bake for 20 minutes. Remove the tofu from the oven, add more BBQ sauce to coat them again, and bake for another 20 minutes. Finally, broil the tofu for 2 minutes to achieve a crispy texture. While the tofu is baking, bake a sweet potato in the oven. For serving, pair the BBQ baked tofu with the baked sweet potato, 1/2 mashed avocado, sautéed zucchini, and sautéed kale.
