Bacon Wrapped Maple Brussel Sprouts

Coat the brussel sprouts with olive oil then sprinkle them with salt and pepper. Cut the bacon in half lengthwise; this is important to ensure they are long and thin enough to wrap around the brussel sprouts, as bacon shrinks during cooking. Wrap bacon around a brussel sprout and secure with a toothpick (soak toothpicks for 10 minutes beforehand to prevent burning). Bake for 15 minutes at 400°F. In a small bowl, mix the maple syrup and balsamic vinegar. Pour this mixture over the brussels. Bake for an additional 20-25 minutes. That's it! Super easy and SO tasty!!
