This Bacon, Avocado, & Roasted Corn Salad is an easy and delicious side dish or appetizer, perfect for a weekend gathering. The corn can be roasted in the oven or grilled, offering a simple yet flavorful addition to any meal.
Drain the corn and pat dry. Add to a bowl then add on the other corn ingredients (1/2 tsp paprika, 1/2 tsp olive oil, 1 tsp salt). Mix together and bake at 425F for 20 minutes, mixing it up halfway through. For the bacon, I like to line a sheet with parchment paper for easy clean up. Bake 6 slices of bacon at 425F for 15 minutes. Pat off some of the grease and break into pieces when it’s done. Once the corn and bacon are done, add to a bowl. In a small bowl, mix together the 2 tbsp olive oil, juice of 2 limes, 1 tsp garlic, 1/2 tsp salt, and 1/2 tsp paprika. Use high quality olive oil for the tastiest salad! Then add in cubed avocado, chopped spinach, and diced red onion in with the corn & bacon. Mix together then drizzle with the olive oil mixture and stir up. Then enjoy!
