Apple Streusel Muffins

In a large mixing bowl, whisk the eggs. Then add in the rest of the ingredients besides the apples. Mix well, then fold in the apples.

For the loaf: Line a loaf pan with parchment paper and add the batter in. In a food processor, add all of the ingredients for the topping (coconut sugar, almond flour, pecans, cinnamon, salt, applesauce) and pulse together. Then add it on top of the loaf. Bake at 350F for 38-42 minutes!

For the muffins: Add batter about 2/3 of the way up muffin cups then add the topping the rest of the way. This recipe makes 9 muffins! Bake for 25 minutes.

Let cool completely, then enjoy!
