These easy 15-minute blackened salmon tacos are a great option for a quick and healthy dinner. Featuring seasoned air-fried salmon, homemade pickled red onions, and fresh toppings like avocado and feta.
To make the pickled onions: Thinly slice the red onions. In a small saucepan, heat the apple cider vinegar, water, 0.5 tsp salt, and maple syrup over the stove for about 3-5 minutes until dissolved. Add the thinly sliced onions to a jar with a lid. Pour the hot liquid mixture on top, shake, and put in the fridge for at least 4 hours up to overnight before eating. Store in the fridge for up to 2 weeks.
To make the blackened salmon: In a small bowl, mix 0.5 tsp pepper, 0.5 tsp salt, 1 tsp garlic powder, and 0.5 tsp paprika. Brush the salmon fillet with olive oil, then season generously with the spice mixture. Air fry the salmon at 400F for 12 minutes.
To assemble the tacos: Warm the 6 corn tortillas in the oven. Flake the cooked salmon. Prepare sliced avocado and crumble feta cheese. Fill each warmed tortilla with blackened salmon, pickled red onions, avocado, and feta cheese. Enjoy!
